INGREDIENTS:
- 135g (1 cup) Plain Flour
- 105g (3/4 cup) Soft Brown Sugar
- 1 tsp Baking Powder
- 2 tsp Cinnamon
- 1/4 tsp Salt
- 120g (1/2 cup) Apple Sauce
- 90 ml Milk, we use soya or almond milk
- 55 ml Oil, we use vegetable oil
- 1 1/2 tsp Cider Vinegar
- 1 tsp Vanilla Extract
- 40g (3/4 cup) Walnuts, chopped (optional to top muffins)
METHOD:
- Pre-heat oven to 180 fan and line a 6 cup muffin tray with muffin liners.
- In a large bowl sift together flour, sugar, baking powder, cinnamon, and salt.
- In a small bowl or jug, combine the apple sauce, milk, oil, vinegar, and vanilla
Mix until combined. - Add the wet mixture to the dry ingredients, folding until combined. Be sure not to over mix the batter!
- Divide the mixture between 6 muffin cases.
- Top each muffin with walnuts.
- Bake the muffins in the pre-heated oven for 22-25 minutes, until well risen and golden on top.
