INGREDIENTS:
- 240g Can of Chickpeas, drained well
- 2 tbs Mayonnaise, ensure vegan if important to you
- 1/2 small Red Onion
- 1 small stick of Celery
- 1.5 tsp Dried Dill
- 1 tbs Lemon Juice
- Salt and Pepper to taste
METHOD:
- Using a sharp knife, chop the red onion and celery into small pieces, and drain canned chickpeas, rinsing very well with water.
- Transfer chickpeas to a large bowl or dish, I use a baking dish as the shallow and wide surface area makes mashing easier.
- Using a fork, smash the chickpeas, leaving some texture to them. I like to use a fork to smash the chickpeas, but you could blitz in a food processor if you like a smoother texture. Add the mayonnaise, stirring until combined.
- Add the chopped veggies, dried dill, and lemon juice to the chickpeas.
- Mix all the ingredients together, adding salt and pepper to taste. I find this tastes better with quite a bit of salt.
